Sourdough prevents sudden spikes in blood sugar. The slow fermentation process breaks down some of the starch, so the pancreas doesn’t have to secrete as much insulin to regulate blood sugar. This means there is a lower Glycemic index in sourdough baked goods than commercially yeasted breads.
Extended freshness up to five days due to naturally present lactic and acetic acids (it gets hard, not mouldy)
Lower percentage of gluten because lactic acid bacteria break down glutenin and gliadin – the two proteins that make up gluten. In sourdough form, gluten is more easily digestible and does not cause a feeling of bloating.

I have been baking sourdough for my family since 2020 when everyone picked up a sourdough starter. It transformed the way I thought about bread. I enjoyed watching the rhythm of the rises and making something special while I was 'stuck' at home. To me, bread is more than just something to hold a sandwich together. It is made to be shared, to nourish and to bring joy; from simple, local ingredients into a beautiful aromatic delight. I like the "Boule" round loaves, but I found the most practical for my family's everyday consumption was the loaf. I am thrilled to share the freshly baked sourdough loaves & treats with my community.
